Kyuri no Sumomi (Japanese Vinegared Cucumbers)

Vinegared salads are a great counterpart to fried foods in Japanese cuisine (such as tempura), and are also a cool, refreshing course during the hot, sticky summer months. Not only are sunomono salads quick and easy to prepare, but most are very healthy as well.¬†”Sunomono” simply means “vinegared dish” in Japanese¬†(“su” means “vinegar”), and is a catch-all term for a number of dishes.

Directions:

Peel and slice in half lengthwise and remove seeds.

Cut into thin slices.

Combine all other ingredients and marinate cucumber in the seasonings for at least 1 hour.

Serve as a side salad or relish.

  • 1 green cucumber
  • 3 tbsp mild vinegar (rice vinegar)
  • 1 tbsp water
  • 2 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp finely grated fresh ginger
